Tiny Bites

For the cake

• 1/2 cup pumpkin

• 3/4 cup brown sugar

• 3 eggs

• 1 tsp vanilla

• 1/2 cup oat flour

• 1 tbs dark cocoa powder (cacao powder also works great)

• 1 tsp baking powder



For the ganache

• 3 oz dark chocolate bar

• 1/4 cup coconut oil

• 1/4 cup cocoa powder

Cut with a pizza cutter for straight lines!

For the ganache

Ingredients 

Step 1
Preheat your oven to 350 degrees.

Step 2
Mix pumpkin and brown sugar in a stand mixer on high.

Step 3
Add in eggs one at a time. Mix on medium.

Step 4
Add the remaining ingredients and mix until just combined. Be careful not to overwork the batter.

Step 5
Pour the batter in a lined 9x13 in baking tray. Bake for 10 minutes. Rotate and bake for another 5 minutes until just set. Remove from oven and place in fridge. 

Step 6

To make the ganache, place all ingredients in a microwave-safe bowl and melt in 20-second increments. Be careful not to burn!

Step 7

Remove the bites from the fridge and pour the ganache on top. Using a gentle rubber spatula, spread the ganache evenly. Place in fridge to set and cut in small bites. TIP: I use a pizza cutter to cut them straight!
